I'm sorry to hear that Ozark!

I'm a big venison guy...I just don't eat it enough though.

Beef, turkey, fish and venison. I sure would like to hear how Ezearln cooks up back strap, been cutting it up thin and cooking it in ghee, or coconut oil. Can you BBQ it? How do you keep it moist? Been boiling up some stock with the back bones and neck, made some awesome stew. Don't eat pork or any fish with out fins or scales.

How can I pick more than one catatagory?

I've eaten all of the commercially available types but still need to try several game animals.

Dogs & cats have no interest for me.

I picked the fine Bovine catagory but the best wild game I have eaten still has to be elk. While growing up in Indiana I was spoiled with the deer that grazed in my friends pastures. When I hunted deer out west I tasted them and haven't shot one since. Way to gamey for my liking. I have eaten dog while stationed in Korea and found it to be very good. Most everything I have tasted from the wild is always better than commercial maybe it has something to do with the fact that it's something that I harvested or maybe it's the lack of chemicals.

My #1 FAVORITE has got to be Caribou! But I'll eat any game/fish/shellfish.

I like pretty much everything except the carnivores and I have never tried any of them so I can't give them a flat no. Never tried one of those vegetarian's either but I guessing that they are way to mealy and mushy for me. Aren't rabbits rodents? I like wild rabbit but not domesticated, or maybe its the collecting part I like. It's a lot more fun to shop in the woods than in IGA, although milk presents some real problems.

If it stands still long enough I'll eat it but since I could only choose one I went with the one I enjoy the most not the one I eat the most. Now my favorite has to be a full roast pig, I make one of these every Christmas Eve for "Noche Buena". I usually salt it down then marinate it over night in Sour Orange, Garlic and Oregano. Let that pig roast slowly for about ten hours, I use guava wood to impart a sweet smokey flavor. The last fifteen minutes I'll rub the skin with either honey or maple syrup and then flip it skin side down so the skin gets nice and crunchy. Man I can't wait till December 24th now!

He's a website that shows a Cuban Pig Roast.
