Usually fry squirrel if they're young, and either gumbo or stew if theyr'e not. I assume you're talking about grey, not fox, squirrel. Yes, they are rodents, but so are rabbits, and squirrel is light meat, not dark. Muskrat is extremely dark meat, but very tender. As with most game, it's good on the grill if basted, or wrapped in some sort of fat. Both Muskrat and Beaver are great when basted every 15 minutes or so with a mustrd based BBQ sauce.

Yep, rodent meat is lean - you can't survive for long on it. But it sure is good in an occasional meal! Fried or in gravy - yummy! Gotta try the grilled though! We shoot mainly Gey Squirrels, which can be anything from white to near black down here. We used to be able to hunt the big fox squirrels, but they are now protected. We don't have those little red squirrels ("pine squirrels") down here. Rabbits aren't truly "rodents" - they are a different family. Close enough though.

Well, you ask them nithely, thilly . . . Oops - I meant Grey!! We ain't really supposed to shoot the White Squirrels - folks like 'em. They tell us how the local fishing will be. If we see the Whites out feeding in the morning just after dawn, fishing will be good. If the Whites aren't seen, neither will the fish. Yep, old "Fisherman's Tale" - but it seems to work! http://tornado.brevard.edu/whitesqui...esquirrels.htm The little buggers were brought down here from the carolinas a few decades ago, by a newly arrived resident who liked them. She released them, and they have thrived - along the Wakulla County rivers and in our local Natural History Museum grounds. They are NOT albinos! They breed true.
