Either salmon in the oven with butter and Penzey's Northwoods seasoning or Lake Erie Perch deep fried or fried in a pan. Runner up would be crappies caught in a northern Ontario lake, pan-fried and washed down with Labatt Blue and Crown Royal.

Mmmm.... Yellow rice... I make many trips to Florida every year, and the particular area is very multi-cultural, particularly Greeks (and other Mediterranean countries) and Latino food. Yellow rice and fried plantains are served with just about everything in my personal favorite spanish/latino restaurant, small little immigrant family owned place.

A subject close to my heart. I catch a lot of rock fish, I prefer to bread with crushed ritz crackers and fry for fish tacos, or by its self. I make a sauce of equal parts plain yogurt and mayo add lemon juice and salt and pepper, this is fantastic over any fried fish. My second favorite is to chop fresh garlic into some melted butter and pan fry the fish (scallops too), then I set the fish aside and add lemon juice salt and pepper to the garlic butter and whisk into a sauce to pour over the fish. Its yummy!

blackened mahi-mahi is my fav. or now don't laugh at this but i also use a dry bar-b-q powder that i put on mahi-mahi and do it like the blackened fish. i have a thin black iron skillet that i get red hot and put just a little bit of oil on it and then place the fish on and cook for about two min. then flip and cook another two min. man thats making my mouth water.

1) SUSHI!! I go to the coast and gather laver and dulce once a year. Make sticky rice. Soak just about any variety of fish as long as it's fresh in rice vinegar and saki for a few hours. Assemble and eat (pass the wasabi!). 2) slow sautee on stove top with salt, fresh cracked black pepper, lemon, butter, onions, lots of garlic, thyme, rosemary, oregano and FRESH basil..... slightly undercooked. 3) wrapped in aluminum foil w/BBQ sauce, salt/pepper and throw on the fire for a few minutes. 4) Roasted on an open fire on a stick and just plain, no salt/pepper or anything else.. |

My wife cooks salmon by putting a fillet in a baking pan skin down and covering the top with pesto sauce, then just into the oven. It makes you feel good!

Mahi Mahi(dolphin fish in Florida ) I s my 3rd favorite. After Snook and Cobia. Swordfish dont suck either.
