I built some drying racks out of pine lumber and aluminum screen. I thin cut the squash (3/16 - 1/4 inch thick slices) and place on the racks in the sun. Doesn't take long to dry and we can eat it all year long. I do the same thing with chili peppers.
Lesson Learned...don't try and dry cucumbers - yuck, they taste awful when dried. Pickling them is the best option.
