I'd say 7-08 because you mentioned pigs, around here they can run upwards of 400 lbs and even the small ones are tough to put down at times.

the 243 is a great round, lots of factory ammo
the 7mm08 is also a great round but is best used by reloaders
either should serve you well

The 7mm-08 would be my pick of the 2 choices. It is much more versatile.

The 7mm08 is a reincarnation of one of the best deer calibers of all time, the 7x57. It's from the .308 family, of course, thus fits into a short action, unlike it's older peer. Maybe the best thing about a 7mm08 is that caliber-wise, using LM loadings, you can turn it into a .280, shooting a 140gr bullet at 3,000FPS. You can load and shoot light 120s too, so I'd say for what you've mentioned , it's more versatile.

One .243 advantage

The 7mm/08 and the .243 are excellent cartridges.
The .243 is chambered in some excellent varmit/target
quality barrels on bolt actions from both Remington and Ruger.
So, this does tip the decision scale toward the .243 in my opinion.

However, we are all different, you will get other opinions,
and I wish you good shooting and good hunting.

For all game you mentioned I would take 4 pounds of c4 a coffee can and...no wait. Sorry, Don't know what came over me.

I also would opt for the 7mm-08. Little bigger with out much difference in recoil. Although, if you do your part both cartridges will do what you ask. I agree with Toolman that the larger pigs may take a little more authority to take take them down to stay.
