Okay Chocoholics.....

I need some help, tis the season and I want to make some dark chocolate candy with my sons...you know covered peanuts, etc....

I want to make dark chocolate and make it from unsweetened bakers chocolate. In this way I can make it the right sweetness and have a little fun as well as not have to melt down expensive and low grade candy bars. Face it, the chocolate in most candybars is a !!!! shot far away from dark chocolate and most of the dark chocolate candybars out there are too soft or creamy for my tastes.

I like dark, rich, chocolate bordering on bitter.......

any ideas or help?

I am mostly looking for sugar to chocolate ratios etc.....

Baker's makes many different types of chocolate as far as sweetness levels. Not to mention they have some excellent recipes. I would try there website. If that doesn't work let me know I'll check my many cookbooks for you.
