I'd use my Buck Nighthawk because it's the toughest knife I have. But it would be a bit too big for some things, so if I could I'd carry my Buck NXT or Omni-hunter (probably both) too.

As a matter of fact, the very model used to kill Kirk's son in ST Movie III.

United Cutlery used to market it as "The Klingon Bird of Prey", but at some point Paramount must have called them on it and the packaging was changed to simply call it "The Bird of Prey".
