Browning Hi-Power is a great gun, one thing is the trigger - hate it, not a quick reset.
Sig seems to be the way to go for me. Like you I don't like polymer pistols. Glock isn't ergonomic to me, I can't hit spit with it - grip swell, angle, etc. Springfield XD isn't all too reliable in my experience.
Beretta 92/96 is another idea. Solid gun, high cap mags, ergonomic as anything.

+1 on the CZ-75. Awesome gun, you will NOT be sorry! I love mine. A little big and heavy for carry though... at least for me. Holster and belt make all the difference, though, so it might work for you. Don't know if you're looking to carry or not?
Think I don't like about the 40 hi-powers is that their slides are so dang stiff. Maybe it was just that model. The 45 ACP Springfield XD felt the same way. I'd be inclined to go for 40 caliber handguns that are designed for 40 cal, not stretched up to take it. Even if they are safe and reliable.
CZ, Para Ord, Beretta, Taurus, all seem like decent choices. CZ would be my cup of tea if I was sticking to your criteria. Para Ord if price wasn't a factor.

There are not too many 0.40 models that do not have either polymer or "alloy" frames. The only one I know except for specialized target pistols is the Browning Hi-Power. Even the Beretta 96 has an alloy frame. Still, it is a pretty tough gun. Same with the Sigs.
Sig is good, as well as having the ability to change to 357 Sig with just a barrel change. Hard to beat a Ruger stainless if you want a gun that is cheap, and you could drive a tank over and it would still shoot
