Doc | I can't argue with the Doc, I've got a pair of his and hers SKS's and we love them. They shoot very well and with a little practice you'll be able to load using stripper clips faster than with mags. You can get a very good SKS for around $150. Can't beat that for a semi-auto that fires a 7.62 round. The main thing to remember is that whatever you choose make sure its what you want and feel comfortable with. Everyone on here will give his/her opinion but what's right for us isn't necessarily right for you.
Have fun and go to your local range and ask if you can fire some different rifles. I let people shoot my guns all the time (always good to have an extra set of prints on them  ).

In some cases double or triple that amount per firearm of a certain caliber. For instance I only have two 8mm rifles, but 4k ammo for them.
My goal is to buy as much of each caliber that I shoot as I think I will need in this lifetime. If all sales stopped tomorrow, how much would I need to comfortably keep me shooting until I die of old age? That is my ammo purchase goal.
As far as how much you'd actually need for SHTF, it does vary to much to say. It wont help to have 20k in ammo if you're forced to hoof it on foot with only what you can carry in your hands, and with little notice. Or if your house burns down.

I keep 250 rounds of JHP's for each handgun, 1,500 for my AR-15, 1500 for my FAL, 200 12 ga. slugs, 500 12 ga buckshot. In addition, I keep two cases of hi-velocity 1-1/4 oz. number six shot shells, and at least 200 rounds of 150 gr. soft points for my bolt action .308. 22's? Usually a couple thousand at any given time.

As I was reading this, I was thinking of some things.
1) I hope everyone has plenty of magazines, because chances are no one is going to let you load on a mag in the middle of an armed standoff/altercation.
2) No man on this earth can carry 10,000 rounds of ammunition.
When I build my TAPCO SKS w/chopped barrel, I'm going to keep a couple thousand rounds of 7.62 in tins, assuming that in this case, I can take a vehicle for a bug-out. I would keep 300 off that loaded in 15 magazines, 6 of which I can carry in my tac-vest, with the other 9 in my ALICE pack (which is already holding food for a couple days, water, medical supplies, radio, ect.), along with a couple boxes of loose ammo. I would keep a Kimber .45, or other reliable double stack .45 in the holster on my tac-vest, which can hold 4 mags for it in addition to my SKS mags. Again, assuming I could take a vehicle, I'd pack more ammo into it, then bring my scoped 91/30 with a couple hundred rounds, and my 870, with a couple hundred rounds of 00, and slugs.
Sorry if I sound like an as*hole. I'm just thinking its not going to matter how much ammo you have if you can't carry it, and holeing up for a long period of time isn't feasible in a SHTF scenario.

I'm aiming for about 1000 rounds per gun. and I am also aiming for about 5 clips or mags per weapon as well.

9mm - 100 | I'm about where you are. I try to keep at least one box of 550 .22 LR's in rotation, and I have several boxes of .32 and .38 for the other handguns. If I cannot solve the problem with that much ammo, I probably cannot solve the problem.

when the zombies attack i will use whichever firearm i have the most ammo for.
at the moment that would be .308 about 1400 rnds.
i have two weapons that use it.

Right now I have about 1000 rounds for my rifle. And only about 200 rounds for my 2 pistols all together. I did have about 600-700 but then we went shooting lol. I usually purchase all my ammo in bulk usually 1000 rounds at a time at the gun shows. And we have gun shows here about every 2-3 months so I have plenty of oppurtunity.

If you are trying to build up your stocks for a SHTF scenario but you have a budget what would you recommend?
Especially for pistol calibers
More Ball ammo of good quality but way less expensive
Or
Less JHP defense ammo at a higher price.

I have about 500 per caliber. 41 mag., 223, 38 spec, 9mm, 380 acp. 200 for shot gun & 1500 in 22lr. the pile is high in spring & get reloaded in winter.

1000 round for primary battle carbine
500 rounds for primary carry gun (at least 200 rounds of premium ammo)
5,000 rounds of .22LR.
50 rounds of Buckshot, 50 slugs.
This is bare bones minimum, IMO.
