Catfish

I just got back from our annual fishing trip to Mississippi, Actually its my wifes' family's reunion , but its my fishing trip. My nephew and I went over to Alabama and caught quite a few big ole spotted cats around the power plant . Unfortunately the battery on the boat went dead and we had to cut the day a bit short, Got some good samaritan to pull us over to the boat ramp. We tried to use the truck battery but the side mount bolts were not long enough to hook up the wires to. The bad part was that we had to pay $26.00 for a seven day licence in AL, and could only stay that one day, The day before I paid $!8.29 foe a three day licence in MS and did not catch any crappie there. But it was worth every penny to get away and fish for a couple days.

Too bad about your fishing trip having some snags..but good to hear you had an enjoyable time away.

Your post reminds me of how much I miss the four years I spent in Abilene, TX and the many plates filled with delicious catfish and hush puppies that I enjoyed while there.

My wife and I are anxious for warmer weather and some fishing in our area, for trout. A plate full of freshly caught and fried fish sure sounds good about now...

I fished here locally all weekend. It was just great. I caught about 20 yellow bass, 6 Stripe/Hybrids, a nice crappie, and various brim.

Oh, yea!

Did I miss something with your catfish. I tried it a few times when working in Galveston & CC but it tasted "muddy" to me.
Give me a fresh Brown Trout from a Highland river any day!

Maybe it's an "aquired taste" like Malt Whisky?

Wunhunglo, I am a dedicated fan of both Southern fried catfish and Malt whisky. If you catfish tasted "Muddy" it may NOT have been fresh water catfish you were eating or it may have been a cut from a very large fish. Like all fish catfish continue to grow throughout their lives and are a long lived fish. I have seen examples well over 100 lbs! When they get that big the quality of the meat isn't very good. The best size for eating is about 2-4 lbs.

Indeed it does. It's wild food for wild people.

However, pre soaking the catfish in a mix of water, milk, and lemon juice for a few hours tames it down a bit.

Do they farm them down south, I think they must with the demand some of these restaurants put on the supplies.
As for being food for "wild people", Mitch I don't think you guys are that wild; well not the Rednecks, coonasses & stumpjumpers, I've worked with!

Well Elmer, I tried it in a few restaurants which claimed to serve real good local catfish, and I will admit some were better than others but there was no consistancy & I reckon I could taste the mud in almost all the ones I tried.
Not like the fish available on the Canadian seaboard, & Alaska which I found was always excellent quality & taste.

Well, catfish is a bottom dwelling scavenger, quite unlike trout or salmon. The flavor is quite unlike the "eletist" fish 'yall rich folks eat.

The "earthy" flavor is a part.

AAaaah, sort of like a rat with gills?? I understand now so it is supposed to taste "Muddy", not a problem then, I had some excellent catfish in Texas!

I suppose I am rather elitist, growing up just a few yards from where the river flowed into the sea; Brown Trout, sea trout & Salmon, there for the taking!
As for being Rich, that term is rather relative so I suppose I am, I've got a full belly, somewhere warm & dry to sleep at night, a good wife and quite a few gun toys! Yup, I'm rich!

The catfish will scavenge, but is more appopriatelyy described as an opportunistic predator who will eat darn near anything he can fit in his mouth. They do actively hunt and as they mature towards the much larger sizes with age can become more sedentary and wait for meals to come to them. Farm raised catfish tends to have a more uniform consistancy of taste but there remains varied flavors depending on where specifically the fish are raised and what they are raised on.

If yall are fileting (did i mis spell filet ?) your catfish... Cut out the red streak that runs from head to tell.
Removeing it makes your Catfish taste 500 percent better, try it you'll see.
Ezearln didn't you know that ?...A.H
