One of the things that always seemed somewhat contradictory is that they can have electricity, telephones, etc. in out buildings.
For example, my wife and I know this Amish couple who lives near Intercourse but owns a business in Philadelphia. He is prohibited from owning a car but he leases one and has a non-Amish guy drive him to and from busness.
Above his horse barn he has a small workshop where he collects and runs his scale railroad trains. This little workshop/office has electricity, A/C, telephone and such.
The rest of the buildings has natural gas for lighting, heating, etc.
