Smoker

My father recently received a smoker as a gift. But since he is in Iraq right now I get to use it. I was wondering how you use it, and what all can be cooked on them. I have had smoked briscit before, and my grandpa slow cooks hams. But can I cook a deer ham or shoulder when they come in season. Also any basic instructions or recipes and do's and don'ts are most welcome.
