Pollo Fundido

Pollo Fundido is basically a fried chicken burrito topped with jalapeno cream cheese and melted cheddar.
It's not Mex, more like Tex-Mex, and this is my take on it after having it in a few local restaurants.
There are recipes out there which take some real time to prepare but mine is the cheap and quick method.
Normally I will use the outdoor grill to do the frying portion and the parts involving the oven just to keep the mess to a minimum.
You can also use a deep fryer if its available.

Ingredients:
6 flour tortillas
3 chicken breasts
2-3 fresh jalapenos (depending on how hot you want it)
1 jar of your favorite chunky salsa (I use El Pinto green chile)
1 small brick of cream cheese
1/2 small brick of sharp cheddar cut into 1/8" slices(sharp to offset the cream cheese)
2-3 cups vegetable oil (depends on frying pan)
Toothpicks (dont eat these)

Directions:
1. Cut chicken into 1 in cubes and place in a medium pot and set to medium heat
2. Pour salsa over chicken then add 1/2 cup of water to salsa jar to wash out remaining salsa and add that to the pot also
3. Bring chicken and salsa to a boil while stirring, reduce heat allowing sauce to thicken (while stirring try to break up some of the pieces)
4. Remove stem, seeds and vein from jalapenos (or keep them in if you like the heat) and cook them in the oven until soft
5. Chop the jalapenos and mix with cream cheese in a bowl
6. Spoon cooked chicken mixture the center of the tortillas and fold them 'closed' burrito style (thats end, end, top, botom) so the mixture won't fall out and pin them together with the toothpicks
7. Heat the frying oil and slide the burritos into the pan (one at a time), flap side down, brown and turn to do the other side. You can remove the picks once the flap side is cooked because it should stay shut at this point.
8. Once all the burritos have been cooked set the oven to broil (the grill can also be used here with some tin foil to keep them from burning)
9. Spoon a dollup of the jalapeno cream cheese onto each burrito and top with 2-3 slices of cheddar
10. Place burritos into oven and allow cheddar to melt

Serve with beans and spanish rice
