Another Favourite Deer Recipe

This one is a little harder if you don't cook much but well worth the effort. You can get away with using a tougher cut of meat.
1 1/4 lbs. minced deer meat
1 cup diced potatoes
2 or more ( I like a lot more ) cloves of chopped garlic
1/4 cup chopped onions
1 table spoon bacon grease.
Seasonings like salt, pepper, wild sage, whatever to taste
Make a pastry out of;
4 cups flour
2 tsps salt
2 beaten eggs
1 1/2 cups lard ( I again prefer bacon grease )
1/3 cup water
Mix all of the pastry stuff into dough, divide into 6 balls and flatten balls into 6inch circles.Mix all the meat and such, then place 1/6 of the mixture on 1/2 of each pastry. Fold the other 1/2 over ( like a perogy ). Cut a few slits or poke with fork the top of each. Beat 1 egg yolk with a spoon of water and brush that on top. Bake @ 400 for 15 mins. then turn oven down to 350 and cook for 30-40 minutes more til crust is golden brown. Crack a few wobbly pops, and you and your buddies got supper.
Hope you like it, don't be scared to improvise, I usually do it more by guessing than measuring, but decided to measure stuff out one time so I could share it with my buddies . Yum,YUM. Good luck, Good hunting, and Good Eating.
