SKS, Ruger 10-22, a M38 mosin nagant or a good crossbow would be my suggestions.

Getting a used Mosin or Mauser would be a great start, but you can also get a used Makarov at the same time for around $300. Then you would be more complete for firearms. BTW, I would go with a mauser over a mosin because they are much better regarding the bolt strength and stronger in general... plus simpler in design. On top of that, you can rebarrel down the road to a more common caliber if the need arises, such as .308.

I'd go with a 12ga pump. The 12 Gauge shotgun can take down any animal in North America with the right load.

Tough one... A 12ga will take anything from birds to med game. Maybe even heavy, but from my opinion - I repeat MY opinion only med game.

A mosin or mauser, preferably an 8mm mauser because factory loads are so diverse would be my rifle of choice.

So I would have 2.... a 12 gauge and an 8mm Mauser.

That said, I'd give some thought to loading it with those half-length shells that are coming back on the market. You aren't going to be making 100 yard shots with your 12 gauge in a SHTF scenario on the way out of the city; most places, you'd be hard put to find 100 clear yards to shoot in. Using these demi-shells effectively doubles your magazine capacity for close-in work without sacrificing hitting power at those short ranges. Test them first, of course, because some shotguns don't like them. But if they'll work reliably in your shotgun, I'd go with them for an initial load-out to get you on your way out of town.
I second the comment about the Mossy's safety. I've owned one for a dozen years (the first firearm I ever personally bought), and it's damned near indestructible. For Christmas this year, I got a sweet deal on a pair of 870s in a similar configuration I'll be giving to my younger cousins...full tube, but they had the 18" bbl as opposed to my 20".

The first thing I noticed about the 870 was the safety. When I slid my thumb up over the stock to check the safety, I was shocked to find it wasn't there. It took a few minutes to get used to the safety being almost identical to that of a Red Ryder BB gun!

I'd personally go with the Mossy because they tend to be a bit cheaper, but either way you go you're good. There's no greater deterrent in the world than hearing the slide of a 12ga racking back within earshot...trust me, I've seen it in action!

Just a word of advice hear...don't bother taking the stock off of your shotgun and replacing it with a pistol grip. It's really just not worth it, if you want it to be useful at all. A slide 12 can easily be shot from the hip with a great amount of usefulness at close range, even with a full stock...but a pistol grip shotty can't be shouldered. Ask yourself..."Am I really going to gain that much?"

I gotta say go with the mossy 500 12 ga. for under $ 300 ,You can load up with some ammo too. your in the city trying to get out. clear a path, that's what its made for. your not trying to snipe advasaries or such ( ie. sks, mosin or ak/ar). you said you had plenty of weapons at your BOL. I own a 590A1 (awsome gun), bushmaster AR in 5.56, sks yugo , bolt action .308 , 10/22, 1911 .45, XD .9mm, .38 revolver, and a few others. good luck with your search, stay safe.
