Swedish rye bread !!

Any of you Scandahoovians have your Grandma's recipe. I have mine, but it makes EIGHT loaves !! Ufta !! Someone got a 2 loaf recipe ?? Prolly not, because they didn't piss around for 2 loaves on the farm !! Reducing it does not cut it.

In addition, what do you serve along with it at Thanksgiving and Christmas ??
Rye bread, Meatballs and Potato Sausage

Yep larmus, being 1/2 Irish my weekly baking always includes some soda bread. I make it plain, and cinnamon raisin, and also with Feta cheese and cracked black pepper.

And yes, lots of real unsalted butter !!

I like to make my own bread and rubin sandwiches are great. I learned how to cure corned beef (deer) and it tastes just as good as the stuff you buy at the grocery store, now all I have to do is learn to make swiss cheese and I won't have to go to the store at all. I think I'll leave the cheese to the pros.

I've got a Three-Grain Danish Rye Bread Recipe.... makes 2 loaves. Thanks to my Gramma (RIP, I got her cook book) and the United Lutheran Church in Gatzke MN.

Here are the ingredients:

1 pkg. active Dry Yeast
1/4 cup warm water (105 - 115 deg)
4c butter milk
1/4c sugar
1 1/2 T salt
1/4c shortening, melted
6 1/2c medium rye flour
2c whole wheat flour
2c all-purpose flour

If you need the instructions I'll publish those too. BTW at the end of the instructions it say "Freezes well".

99 those old recipe books from the Mid-west are great Iv'e got my mothers from Lutheran church in Vermillion S. D. Only thing is you should probably substitute something lighter for all the lard they call for.

Back in those days they actually worked it off... me sitting in front of my computer, I'd blow up like a balloon if I ate like she cooked...
