I know it's turkey time but here is something that I came up with on the last canoe trip... it was Fantastic. We tried this with lake trout and northern. The laker wins hands down, but the northern was pretty good too.
Gut & gill the fish
Fill with thin lemon slices (not overlapping)
Garlic, thymen, rosmary and parsley, salt and pepper.
A fresh chili would be fantastic (no seeds).
Squeeze lemon juice over the outside of the fish.
Wrap in aluminum foil and roast over the coals, the laker was about a 5 lb fish was done 12 min per side. The northern (3 lb) was done 10 min per side. Each could have gone about a minute less.
That was the easy part. We did this on a canoe trip, we brought one package of cream and some fresh mushrooms and this turned into a fantastic cream sauce:
dice onions and quarter the mushrooms.
Sautee these in butter with salt and garlic
When the onions are done (golden brown) add the cream. let it cook down a little. Add vegetable broth (or a cup of water and a teaspoon of the powdered stuff)
add pepper and any herbs that you have and let simmer.
Goes well with rice or potatoes. We had left over rice and potatoes warmed up from the evening before. It was fun to do in the woods and was one of the best meals I have ever had.
Tonight it's the same sauce made with fresh salmon instead of mushrooms and home made noodles. Started making them this summer and got hooked. I usually make a big batch of dough and portion and freeze it. I also have a noodle machine to make tagliatelle or spaghetti.
