I have my scope on a quick release mount for picatinny rails. My question is, are all the rails on every gun supposed to by the same as far as straight and on target goes? If i take my scope that is sighted in perfectly off of one gun with a rail, and put it on another gun with a rail, should it still be dead on or will it almost always require adjusting?

The most common is weaver. Some are mil .spec or what they call mil. spec meaning the specifications are up to or at military specifications. There are some that aren't. Most people, myself included, prefer weaver style. Weaver is the kind that you would on the top of a flat top AR.
As for taking the scope with mount off of the gun it's sighted in on and putting it on another gun will it be sighted in on that gun as well if it has the same style rail? I would have to say no, especially if it's a different caliber.
The mounts, or rather where you mount the mounts would have to be mounted in the same exact spot for one and if it's a different gun by a different manufacturer, the odds are they won't be in the same spot.
Now an AR15, it might be and or stay sighted in from one to another if the caliber is the same as they're all, well most, are mil. spec. or made the same under and with the same specifications.
What brand of quick release mount is it?
And what two guns are you trying to mount it to? And what calibers?

I agree with Deersniper. The QD feature is supposed to bring it back to zero on the one gun it was originally fitted to, allowing the user to switch between irons, holo's, and scope as determined by the situation.
My experience using a Weaver base (not a rail) and QD mounts did not return the scope to exact zero. It was "minute of Whitetail" close on a Model 88 Winchester carbine, but not something you would want to rely on for precision shooting. Guys here tell me the system works better with rails, but I have no experience with rails and QD mounts.
However, unless two rails of exactly the same manufacture and type are mounted on two guns of exactly the same manufacture and type in exactly the same way, there is no reason to expect that the scope can be simply switched between them and still be perfectly sighted in. You might be within "minute of Whitetail" of your POA, but anything beyond that would seem like a bonus to me. If you find a couple of guns for which it does work, treasure them.
It takes very little difference in position of the scope to make a significant difference in where it is looking. If the front of a 6 inch section of rail is .01 inch higher on one gun than on the other, the line of sight can be higher by about 6 inches at 100 yards.
