Help with Meatballs

Hi All,

I need a new meatball recipe. I have done the typical German stuff and I have even come up with some on my own. I need something new.

Here is my latest creation:

1 lb Ground Beef
1 Tbl Mustard
1 Tbl Tomato Paste
1 Teaspoon bullion powder
Salt & Pepper to taste

I also have this one:

1lb Ground Beef
1 Tbl Mustard
1 cup bread crumbs
1/8th cup catsup
1/2 onion diced
1 diced pickle
Salt & Pepper to taste

OK, the measurements are only close. +/- on everything.

I usually make meatballs out of this, but could be a Frikadelle (like a hamburger)

Those sounds like awesome meatballs! I'm going to have to try them. If you want something good and a little easier:

2lbs hamburger.
2 or 3 eggs.
1 pk of meatloaf seasoning.
3/4 tsp black pepper.
Salt to taste.
1 cup cooked rice or 1 1/2 cup crushed crackers.

Knead ingredients together, and make your meatballs.

Cook meatballs in a pot filled with chicken or beef boullion until done.
Remove from stock, drain.

Fry in a skillet to brown if desired.

Here is another one:

2 lbs hamburger.
3 eggs.
1.5 cups of crushed crackers or 1 cup cooked rice.
1.5 tsp of finely crushed fennel seeds.
2 celery stalks finely chopped.
1/2 onion very finely chopped.
2 green onions chopped.
2 tsp powdered beef boullion (to taste).
Pepper to taste.
1 tsp ground parsley.
1 tbsp crushed garlic.
1/2 tsp red or white vinegar.
1/2 tsp Worcestershire sauce or A-1 steak sauce.
1/2 tsp crushed allspice.
1/8 tsp crushed cloves.

Clarify onions and celery, let it cool.
Add all ingredients together, knead together well, for a finer texture, knead more. Make meatballs and cook in same stock as the other recipe.

You can use 1lb of ground, mild Italian sausage mixed with 1lb of hamburger instead. If doing this, add half the amount of fennel seeds as the sausage will have fennel in it already.

The first recipe is EXCELLENT for stuffed bell peppers, and the second one makes GREAT dolmas!.

99dragon99 instead of using ground beef substitute hot italian sausage unless you have an aversion to pork. My local Krogers grocery store has a very good lean hot italian saisage that is available in links or bulk packages. I frequently substitute it for beef in many recipies or even make it into burger patties to throw on the grill. Good stuff. I've never met a sausage I didn't like!

Here is a simple but delicious recipe.

Swed style

I down sized the portion size, from 3 lbs

1 pound ground beef , sausage, veal, venison, moose etc.
2 eggs
1/2 cup bread crumbs
1/2 onion, chopped
4 cloves garlic, minced
2 tablespoons Worcestershire sauce
3/4 cup shredded Cheddar cheese
1 tablespoon butter
(My daughter adds chopped green pepper)

3 tablespoons all-purpose flour
1 teaspoon instant coffee granules
2 teaspoons beef bouillon
2 cups water
3 tablespoons sour cream, or more to taste

In a medium bowl, mix together the ground beef, eggs, bread crumbs, onion, garlic, Worcestershire sauce, green pepper and Cheddar cheese until well blended. Form into walnut-sized balls.
Melt butter in a large skillet over medium-high heat.
Add meatballs, and brown evenly.
Remove from the skillet, and set aside.
Stir flour and instant coffee into the pan drippings.
Add beef bouillon and water to the pan, and mix well. Bring to a boil, and allow to thicken. Stir in sour cream.
Return meatballs to the skillet, and let them simmer in the sauce for 20 to 40 minutes.
Excellent over rice or egg noodles.
I also like them over fresh baked bread!

Now I got the hungers!!!

**** it Grizz, Your allways getting me hungry. I was just telling someone about the turtles you make from burger, hot dogs and bacon. Im trying your recipe this weekend. I like all the ingredients you use. I should have known that coffee was one of the ingredients. Im going to put it over noodles when I make it. Thanks for the good recipe.

I like mine a LITTLE on the spicy side so I might add some tabasco sauce or jalapenos or anything else along that line just my taste speaking

try and find a three some equal amounts of ground Pork,Veal and Chuck about 1.5 to 2 lbs 1/2 cup of fresh grated parmasean 1 egg 3/4 cup of breadcrumbs 1/2 cup of fresh chopped parsley salt and pepper mix well by hand and then start with 1/2 cup of water gently mixing in mixture till the form nice balls {i do a bit larger than a golf ball} take a baking sheet line it with Aluminum foil gently grease the foil with just enough Olive oil to keep them from sticking and cook for 20 minutes in the oven . Then enjoy

As mentioned a couple of times above, mix the meat. Pork sausage mixed with beef or whatever will make a huge difference. I mix my deer burger with 50% fresh pork sausage and have converted some non believers.

I've been to that site a few times and I am not too fond of it. There are too many recipes that call for can's, brand name spice mixes or ketchup.

I actually saw one that said open can 1, 2 and 3. Mix and heat. That is not really cooking to me. Pre-packaged spice mixes are something that I have successfully avoided for almost 10 years, with one exception, my GF made a lasagne with a Lasagne-Spice-Mix... I burped that all night long. That is the ONLY time that she has cooked for me in the 3 years that we have been together.
