    Coupe nights back I pulled out some of last Sept caribou "leg meat"
    chucked some in a couple fist sized chunks in the stock pot and dumped in a 1/4 cup dried chopped onion, a couple turnips and Taters carrots salt & peper and coverd with water set it all on to simmer
    the meat was pulled out mid way and cut down to smaller pieces sized of 1" cubes when done it dident come out gamey as the std caribou taste
    the kids kept coming back till they was full as ticks
    What did I do that was different?
    did the cooking the vegitables change the flavor?

    Yes. The "stock" you created changed the flavor. I like the game taste, but I ate deer meat almost every week of my childhood. If you're gonna eat it a lot, you have to get creative. Slow cooking also tenderizes as well.

    It was AGED Caribou...Big difference !!!
    I age all my moose, caribou, Buffalo etc by hanging it a month before butchering and freezing...Mold on the outside, Juicy in the middle !!!
