I want to stuff some anchos. I'm thinking of using pork tender loin what do you think? Any Ideas.
Try tenderloin and seasoned rice. It will hold together better!

I'd suggest pork sausage, diced jalapenos, onions, and tomatoes , and maybe an egg or two mixed in. I also like lots of cheese.
