I highly recommend the M91/30 for practical use, but only if you plan to stick to iron sites. I wouldn't try to scope one. The 91/30has a long site radius good for accurate shooting. The action is super smooth. You can get hunting ammo from Wolf or Winchester. Power's comparable to a 30-06, so it'll take pretty much any non-dangerous animal on the continent, plus the smaller carnivores.
Far as Sporterizing goes, nothing really needs to be changed. Most I'd do is slip it into a sporter stock for hunting in order to preserve the original stock for collecting.
